Pop-up restaurant created by VET by EHL Students in Villars

 

As part of the VET by EHL hospitality training program, students are asked to work on a capstone project: the F&B Pop-up Concept.

Students are expected to develop and implement a unique Concept using an operational location provided in the learning center. Students apply the concepts of market research, concept planning, promotion, food production, sanitation, customer service, promotion, and quality management in the running of their Pop-up Concept.

The learning objectives encompass three key domains: Knowledge, Competencies, and Mindset.

Under Knowledge, students are expected to identify stakeholders in F&B concept creation, outline steps for idea transformation into marketable products, analyze ambiance creation in F&B outlets, and grasp promotional language rules and sales aids. Competency goals involve planning, executing, and evaluating F&B operations, designing pop-up concepts with menus, pitching operational concepts, and creating sales aids. Finally, the Mindset objectives emphasize the importance of effective planning, awareness of risks in hospitality creation processes, and the ability to translate ideas into marketable F&B products, fostering a holistic understanding and approach to F&B management and innovation.

At the Villars Palace Academy, students have recently put into practice all the knowledge they have acquired during their year of training. They chose a unique pop-up experience that seamlessly combined music and a culinary adventure representing various countries.

Records, the restaurant-bar created by the students with the help of their facilitators, offered a unique culinary and musical experience.

This project was held for a week at the Villars Lodge. An unforgettable and remarkable adventure for both students and facilitators , it was a real success! CONGRATULATIONS!
